Argeo Prosecco D.O.C. Brut
Very pale straw yellow with greenish glints, perfect clarity with abundant, persistent, fine perlage. The fresh, elegant bouquet offers flowery sensations merging into a typically fruity harmonious complexity with intense aromas reminiscent of golden apple. Fresh, delicate, balanced on the palate and light in alcohol with a long fruity finish. Perfect as an aperitif, ideal with fish, it goes extremely well with hors-d’oeuvres and light first courses.
Grape Varieties
Glera (traditionally called Prosecco), with small quantities of Verdiso and Perera.
Geographical Location
On the hills of the first Dolomitic ridges, in the northern part of the Province of Treviso.
Harvest Period
The second part of September.
Vinification
White vinification, that is to say without the skins, at a controlled temperature of 18°C (68°F), for approx. 8 days. Pressure behind the cork: approx. 5 atm
Taking on of the Sparkle
Through slow refermentation in large sealed tanks at 12-14°C (approx. 54-57°F).
Serving Temperature
5-7°C (approx. 41-45°F), uncorking the bottle just before serving.
Residual Sugar
About 12 gr/Ltr.
2015 "Blina" Barbera d'Asti
Agostino Pavia founded his eponymous estate although it is now run by his two sons, Giuseppe and Mauro. The familys crafts distinct Barbera from their vineyards in the village of Agliano Terme in the Asti DOCG of Piedmont, though they also have vineyards in Monferrato. Their 10 hectares of vines are planted not only to Barbera, but also Grignolino, Syrah, and Dolcetto. All work in the vineyard is done by hand, where the Pavia family firmly believes the mantra that great wine is made in the vineyard.
Giuseppe and Mauro believe that their cellar is the place where the terroir turns into wine. This Barbera d'Asti comes from a single vineyard, Blina. The wine is made from 100% Barbera that is fermented and aged in stainless steel to preserve its freshness and fruit quality. Intense aromas of red berries and plum lift from the glass with an undertone of juniper. The wine has fresh acidity and silky tannins, displaying lots of tension and purity of fruit. A long, lingering finish entices you back to the glass for another sip. Pair with light pasta dishes, pizza, or risotto.
2016 Roero Arneis DOCG
Grapes: 100% Arneis
Winemaking: The grapes are selected from vineyards located in the middle of the Roero area, in Santo Stefano Roero. The vineyards are approximately 25 years old and are planted with 4.500-5.000 vines per hectare. Harvest starts around mid-September and the grapes are first pressed and then clarified. Alcoholic fermentation occurs in stainless steel autoclave at lower temperature (10-12°C, 50-53° F) to preserve some natural CO2 from the fermentation.
Aging: Wine does not undergo malolactic fermentation to preserve acidity and freshness. The wine is held in stainless steel tanks until bottling.
Description: Pale straw yellow color with fresh floral, citrus and melon aromas with hints of almond. An unoaked, dry, medium bodied white wine with crisp acidity, the Arneis is well-balanced, elegant wine with good complexity and a lingering finish.
Food Pairings: As an aperitif with light hors d’oeuvres, crudités, seafood, salads, light soups, simply prepared veal, pork, chicken and creamy cheese.

Winemaking
After a meticulous selection of the base wines, our wine-making team carefully created the blend of Privilège Rosé Dry. This “still” blend was bottled together with a “liqueur de tirage”- a mix composed of sugar and selected yeasts. Into the bottle, sugars were consumed by the yeast which transformed them into alcohol and also naturally released carbonic gas which made the bubbles into the wine. Each bottle was then aged for 9 months “sur lattes”, which added aromatic complexity to the wine. A dry dosage gave the final touch to this elegant cuvee.
Tasting notes
Deep pink tinted robe with fine bubbles.Aromas of red fruits.Very soft to the taste with unctuous fruitiness. This wine finishes with a touch of sweetness.
Food and wine pairing
This wine will be perfect for desserts, or enjoyed with exotic food, pan-fried foie gras, red meats as a duck breast cooked with red berries or also with white meats.

NV PRIVILÈGE BRUT Traditional Method Blanc de Blancs

Tasting notes
This pale and brillant gold wine has white fruit aromas with numerous fine bubbles.
The palate is elegant, longlasting and well balanced between freshness and fruit. Lively mineral attack giving way to aromas of white flowers and exotic fruit.

Perfect for the aperitif, with a hot or cold starter, fish or white meat dishes. Also very suitable with cheeses such as Brie and Camembert.

NV Rosé Brut de Noir Sparkling (Vino Spumante)
A blend of 85% Grasparossa and 15% Pinot Noir, this lovely sparkler offers aromas of apple, berry and bread crust. The aromas carry over to the tangy palate together with red cherry and a hint of pastry cream alongside bright acidity and small continuous bubbles.
CENTO FILARI LUGANA DOC
Cento Filari Lugana hails from a single vineyard that flanks Veneto’s border with Lombardi along the southern shores of Lake Garda. Floral and citrus fruit aromas abound on the nose of this full-bodied white. It boasts good minerality and balanced acidity with a pleasantly soft, lengthy finish. Fermented in stainless steel, it rests in contact with the skins for several months before blending.
2016 Reserve Selection Napa Valley Sauvignon Blanc
The 2016 vintage across California was a near-perfect growing season. A mild winter and spring led to a steady mild July and August, followed by warm days at the end of the season for the perfect ripeness. With warm days and cool nights in the summer, grape growers were able to maintain ideal acid levels with balanced, concentrated fruit flavors. The Sauvignon Blanc and Semillon in this Reserve wine were picked between August 26th and September 24th .
After whole cluster pressing the grapes, the juice was fermented in 100% French Oak (mostly Seguin Moreau, Dargaud and Jaegle barrels) to balance the bright fruit with a subtle unctuosity. Stirring the lees gives the wine a creamier mid palate. This wine stayed in barrel for only 4 months. This produces a wine with crisp acidity and captures the flinty, citrus aroma and flavor characteristics of this versatile variety. Our 2016 Napa Valley Reserve Selection Sauvignon Blanc opens with inviting aromas of kaffir lime and guava with hints of honeysuckle. Flavors of stone fruits and gooseberry are accented with a touch of lemongrass offering a crisp minerality to balance the creamy mid-palate and nice acidity.
Moscato d'Asti DOCG
Moscato d'Asti is an indigenous aromatic wine characterised by orange, peach and lime notes, with a sweet taste rich in minerals.

VINEYARDS
Located in Municipality of Castiglione Tinella, Santo Stefano Belbo, Castagnole Lanze and Calosso.
VINIFICATION
After harvesting, the bunches are gently pressed to extract the most flavourful juice from the outermost part of the grapes. The must is kept in stainless steel containers at -3°C, where it can be kept for months. When there is market demand, it is then transferred into autoclaves for temperature-controlled fermentation, microfiltered for purity and then bottled to keep the freshness and flavours intact.
IN THE GLASS
COLOUR: Straw yellow with greenish hues, fine perlage, slow fermentation index.
BOUQUET: intense orange blossom, peach and thyme (the main aromas found in the grapes)
TASTE: intense, elegant and lingering. The sweet sensations are well balanced with a pleasant acidity and fruity aromas typical of Muscat grapes.
PAIRS WELL WITH: ideal with pastries, cakes, fruit tarts, ice cream, biscuits. Also delicious with cheeses such as gorgonzola and in cocktails.
