2018 Sauvignon Blanc Marlborough
Grapes from the beautiful Wairau valley subregion of Marlborough, vines are grown on alluvial soils which radiate heat back up into the canopy.
Grapes harvested at optimal ripeness, then gently pressed the juice was cool settled and then the clear juice racked to, the juice was cool settled and then the clear juice racked to tank for a cool fermentation. Post alcoholic ferment, the wine was aged on lees to add texture and mouthfeel. It was then blended and prepared for bottling.
A classic Marlborough Sauvignon Blanc. Aromas of lemon sherbet, elderflower, passionfruit and ripe white peaches draw you into a finely textured palate brimming with citrus, guava and ripe stone fruit. The fruit is underpinned by a flinty minerality and focused acidity creating a lingering harmonious finish.
Pouilly-Fuissé "Vieilles Vignes"
Terroir
Pouilly-Fuissé is the most prestigious appellation in the Mâconnais.
The grapes that eventually become 'Vielles Vignes' come from three different parcels ideally situated in suntraps on the slopes of escarpment of Vergisson in the hamlets of Pouilly, Solutré and Fuissé, and mature on 60 to 90 year old vines.
These parcels all have south-easterly aspects that expose them to sunlight and warmth, which stimulates photosynthesis, and allows Chardonnay to develop physiological ripeness quickly, under stress, in Burgundy's precarious continental climate.

Vinification
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures before it is transferred to oak barrels (30% of which are new) to undergo alcoholic fermentation.
After alcoholic fermentation the wine is left on the lees to undergo malolactic fermentation. Then they are left to age, on the lees, and under oak, until the following spring (April/May).
Lees stirring takes place throughout the maturation period.
Tasting notes
'Vieilles Vignes' is a deep gold wine that has an intense brioche aroma with hints of stone fruits and flowers, and a restraint that hints at its minerality. It has a complex palate of green apples, with hints of citrus, creamy oak notes, and a mineral austerity that perseveres into an impressive finish.
Service & food pairing
Serve lightly chilled (10-13˚C).
This wine makes is an excellent match with gambas, lobsters, langoustines, or white meat.
Foie gras cuit and Pouilly-Fuissé is a perfect pair.
Its aromatic power also suits it to more exotic, spicy foods such as couscous, fish tajines, and prawns in sweet and sour sauce, and its mineralty means it pairs well with sushi.

Saint-Véran "Rives de Longsault"
Terroir
Saint-Véran lies between the escarpments of Solutré and Vergisson (from which the Domaine des Deux Roches takes its name), on the southernmost slopes of a of a 250 km long and 5-6 km wide prehistoric limestone ridge that runs through the valleys carved out by the river Soâne.
Its vineyards are among the few in Burgundy with a south/south-easterly aspect, which exposes the vines to maximum sunlight and warmth, as well as winds that help to moderate their temperature and stimulate photosynthesis. This allows Chardonnay to develop physiological ripeness quickly, under stress, in a precarious continental climate. 'Rives de Longsault' is made from parcels of vines that are 30 to 40 years old, and benefit from six different terroirs: Maillettes, Pommards, Roncevaux, Carette, Péguins and Jonchet.

Vinification
The grapes are pressed slowly in a pneumatic press. The free-run juice is then drained and left to settle at low temperatures (no higher than 18˚C) before it is transferred into steel vats (70%) and oak barrels (30%) to undergo alcoholic fermentation.
After alcoholic fermentation the wine is left on the lees to undergo malolactic fermentation. The wine is then left to age, on the lees, in steel vats (70%) and under oak (30%), until the following spring (April/May).
Lees stirring takes place throughout the maturation period
Tasting notes
'Rives de Longsault' is a beautiful gold wine with an aroma of stone fruits, citrus, and flowers. On the palate this ample bodied wine is rich and well-structured. The nose has a delicate mineral and citrus finish.

Serve lightly chilled (10-13˚C).
This wine's minerality makes an excellent accompaniment for oily fish (poached or fried), as well as seafood.
Its citrus flavours make it ideal for white meat, such as veal or poultry, accompanied by cream sauces, as well as creamy seafood and mushroom risottos.
It is equally suited to a number of cheeses: goat's cheese, blue de Bress, Comté, Beaufort, and Gruyeres.
